Argentinians use this sauce as a marinade and a sauce for grilled meats, chicken and fish. The easiest way to use it is to generously spoon it over simply grilled meats, chicken, fish or vegetables.
Ingredients
(Makes: 1 1/4 Cup Or 8 Servings)
1 cup lightly packed chopped parsley (ideally, flat leaf "Italian" parsley)
3-5 cloves of garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon chilli pepper flakes
2 tablespoons fresh oregano leaves (optional)
2 tablespoons shallot or onion, minced
3/4 cup of vegetable or olive oil
3 tablespoons sherry wine vinegar, or red wine vinegar, or balsamic vinegar
(in order of preference)
3 tablespoons lemon juice
Directions
1. Place all ingredients in a blender or food processor and pulse until well chopped, but not pureed.
2. Spoon sauce over grilled meats, chicken, fish and vegetables.
