SWEET POTATO CASSEROLE

(Makes: 6 - 8 Servings)

Ingredients

4 medium Sweet potatoes
1/2 tsp Grated nutmeg
dash Ground cloves
3/4 tsp Salt
1/4 cup Sugar
2 tbsp Butter
1 Well beaten egg
1/4 cup Cream
1 tbsp Grated orange rind
1/2 tsp Grated lemon rind
2 tbsp Light brown sugar

Directions

Cook the unpeeled whole sweet potatoes in boiling water to cover for 20 to 30 minutes, until tender.

Slip off the skins and mash until smooth.

Add 1 tbsp (15 mL) butter, and remainder of ingredients except brown sugar.

Beat until fluffy.

Turn the mixture into a buttered casserole.

Melt 1 tbsp (15 mL) butter and brush on top. Sprinkle with brown sugar.
Bake in 450°F (230°C) oven for 35 minutes or until brown.
