ASIAN CRAB CAKES

Ingredients

8oz fresh crab meat
1 egg (beaten)
2 tbl mayonnaise
1/4 cup panko (japanese bread flakes)
1 tsp thai red chili hot sauce
1/2 tsp sesame oil
1 tbl fresh lemon juice
1/2 tsp tamari soy sauce

Combine the above ingredients.

4 sheets nori
4 strips green onion
4 strips carrot
extra egg and panko for coating.

Directions

Spread 1/4 crab mixture on a piece of nori.
Add 1 strip of carrot and 1 strip of green onion the length of the nori.
Roll into a tight roll.
Dip the entire roll in beaten egg and then panko until coated.
Repeat with remaining nori and crab mixture.
Deep fry in peanut or canola oil.
Cut into bite sized coins and serve with sauce and wasabi (optional).
