APRICOT BLATJANG

Try this one as it is close to Mrs Balls as you can get:
Blatjang is generally of smoother consistency than chutney
and can be used exactly as chutney.

Ingredients

2 kg ripe apricots
1 large onion, chopped
1 clove garlic, crushed
500g seedless raisins
400 g white sugar
1 ml cayenne pepper
5 ml salt
10 ml ground ginger
5 ml custard powder
500 ml brown vinegar

Directions

Halve and stone the apricots.
Mix all the ingredients in a stanless steel saucepan
and bring slowly to the boil.
Simmer, uncovered. for 45 minutes to 1 hour,
or until thickened, stirring occasionally.
Pour into clean, warm jars and seal immediately.
