VINNIGE HOENDERLEWERPATEE

Ingredients

225g hoenderlewers
65g botter
1 knoffelhuisie (fyngekap)
1,5 eetl sjerrie
1,5 eetl. brandewyn
sout en swartpeper
knippie gemengde speserye

Directions

1. Spoel die lewers in koue water af en verwyder enige vliese of gekleurde dele
2. Smelt 30g botter in kastrolletjie oor lae hitte en panbraai lewers totdat dit ferm maar binne steeds pienk is (omtrent 3-4 minute)
3. Dreineer en plaas dit in `n bak wat vooraf met knoffel gesmeer is
4. Voeg sjerrie en brandewyn by die sap wat in die pan oorgebly het, bring tot kookpunt en verwyder van hitte.
5. Maak lewers fyn en druk tot smeer
6. Voeg genoeg sout en peper, gemengde speserye en oorblywende botter by
7. Meng deeglik en plaas in klein potjies of `n bak
8. Bedek en laat dit afkoel
9. Garneer met pietersielie en dien op met warm roosterbrood
