Ingredients

200ml dik witsous
3 eiers, geskei
100g (200ml) geurige bestanddele
2ml sout
peper / paprika (slegs vir geurige soufflés)

Directions

Plaas oondrak 2/5 van onder af in die oond.
Stel oond op 180 grade.

Maak witsous.
Klts eiergele tot liggeel en dik.
Meng eiergele met die res van die bestanddele, behalwe die eierwit.
Klits die witte tot stywe stadium en vou die eiermengsel daarby in.
Skep mengsel in oondskottel waarvan net die boom gesmeer is.
Die oondskottel moenie meer as ¾ vol wees nie.
Sit die oondskottel in die oond in 'n pan met warm water en bak +/- 45 minute lank.
Dien dadelik op.

Variasies:
Geurige soufflé : Meng gaar, gemaalde ham en gesorteerde sampioene / gebruik fyngemaakte vis, gemaalde gaar hoender, kalkoenvlies of gar, fyn groente.
Kaassoufflé: Meng 200ml Cheddarkaas by die witsous totdat dit gesmelt het. Voeg ook 1ml mostert by.
